Celiac disease is an immune reaction to eating gluten, a protein found in wheat, barley, and rye. It can lead to gastrointestinal inflammation and prevention absorption of nutrients. Symptoms include diarrhea, bloating, gas, fatigue, low blood count (anemia), and osteoporosis.
