Recipe: Honey balsamic green beans
Vegetables, nuts and a dash of honey transform this healthy dish into something to savor. And one of the best parts? It's quick to whip up when you're pinched for time:
Honey balsamic green beans
INGREDIENTS
- 4 cups trimmed and sliced green beans
- 2 cloves garlic, minced
- Salt and pepper
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1/4 cup pomegranate seeds
- 1/4 cup pistachios, chopped and roasted
DIRECTIONS
- Trim beans. Sauté on medium heat with olive oil, salt and pepper for 3-5 minutes, or until all the beans are bright green
- Add balsamic vinegar and honey to the pan and toss until the beans are glazed (1 minute).
- Transfer to a platter and sprinkle with pomegranate seeds, pistachios and a bit of sea salt.
- Serves 4
NOTES
- If you have a nut allergy, sunflower seeds are a good substitute for pistachios.
